Honey thinned with warm water (typically 3:1) so it mixes properly.

Fresh ginger steeped in simple syrup.

Method

Combine blended Scotch, lemon, honey, ginger in shaker with ice.

Shake hard 12 seconds.

Strain into rocks glass over a large cube.

Float a small pour of Islay Scotch on top.
