Ingredients

  • spirit

    Light, crisp, lightly aged or filtered rum. The default for daiquiris and mojitos.

  • fruit

    Always fresh-squeezed. Sharper than lemon, essential to tiki and tequila drinks.

  • Simple Syrup
  • herb

    Fresh spearmint, ideally. Slap it before garnishing to release the oils.

  • mixer

    Plain carbonated water. Lengthens and lifts a drink without adding flavor.

Method

  1. Add 8 mint leaves and the simple syrup to a highball.

  2. Press the mint gently with a muddler — release oil, don't shred.

    Over-muddling turns the drink bitter.

  3. Add lime juice, rum, and crushed ice. Stir to chill.

  4. Top with soda water. Garnish with a mint sprig and lime wheel.

About this drink

Treat the mint gently — slap it, don't pulverize it. A bruised, herbal lift over rum and lime.
