Ingredients

Light, crisp, lightly aged or filtered rum. The default for daiquiris and mojitos.

Always fresh-squeezed. Sharper than lemon, essential to tiki and tequila drinks.
- Simple Syrup

Fresh spearmint, ideally. Slap it before garnishing to release the oils.

Plain carbonated water. Lengthens and lifts a drink without adding flavor.
Method

Add 8 mint leaves and the simple syrup to a highball.

Press the mint gently with a muddler — release oil, don't shred.
Over-muddling turns the drink bitter.

Add lime juice, rum, and crushed ice. Stir to chill.

Top with soda water. Garnish with a mint sprig and lime wheel.
